Nose: Honeyed and warm with aromas of heather honey, toasted oak, and dried apricots. As it opens, you get hints of orange zest, roasted nuts, and a gentle thread of Orkney peat. A subtle savoury note, almost like charred herbs, adds complexity and reflects Frantzén’s culinary influence.

Palate: Smooth and layered. It begins with golden raisins, vanilla cream, and caramelised apple, then moves into deeper flavours of dark chocolate, nutmeg, and a little clove. The mid-palate brings a faint coastal character with a touch of sea salt, followed by Highland Park’s signature gentle smoke adding warmth and dimension.

Finish: Long, lightly spiced, and slightly dry. Flavours of toasted almonds, oaked spice, and a soft honeyed smoke linger beautifully, leaving a balanced and satisfying impression.

Highland Park’s story begins more than 225 years ago on the remote Orkney Islands, a place shaped by North Sea winds, ancient stone, and Viking heritage. It is a landscape that feels closer to myth than modern life, and this rugged environment has shaped every drop of whisky that leaves the distillery.

The distillery’s origins trace back to 1798, when a man named Magnus Eunson lived a double life. By day, he served as a church officer. By night, he was an illicit distiller who hid whisky beneath the church pulpit to keep it safe from excise officers. It is said that he once distracted inspectors by draping a white sheet over his casks, claiming it was a body prepared for a funeral. Whether fact or legend, it captures the spirit of Highland Park perfectly: bold, clever, and deeply rooted in Orkney tradition.

Over time, Highland Park grew from small-scale clandestine stills into a respected distillery known for meticulous traditional craftsmanship. Yet despite its evolution, it has held tightly to old methods that many others abandoned long ago. The barley is still hand-turned on traditional malting floors. Peat is still cut from Hobbister Moor, rich with heather that gives Highland Park its signature sweet and aromatic smoke. And the whisky still matures in cool island warehouses where salt air and slow aging shape its character.

Cask choice has always been at the heart of Highland Park’s identity. The distillery is renowned for its use of sherry-seasoned oak, which brings richness, spice, and depth.
